sendmail or which one?

On boxes that only send outbound email, I just use sendmail.  Its 
already installed and configured (sanely, even!) on OpenBSD, and works 
out of the box.

But, for a box that I treat as an email server, I use Postfix and 
Dovecot.

Other people like exim, qmail, exchange, etc for their email.
